Kevin's World's Best Cheese Dip

World’s best Cheese dip Ingredients:

  • 1 medium to large yellow onion. (kinda depends on how much you like onions, silly!)
  • 1 large Anaheim or Poblano pepper (2 small serrano’s are a pretty good add-on) (I like the Anaheim)
  • 2 Medium/lg Jalapeno peppers (or 1 Great big one, or 3 medium ones, or 2 mediums and a small, or….)
  • 1 bunch fresh cilantro
  • 1 large velveeta cheese (NOT the low fat stuff) WHITE is my choice
  • 1 can Extra hot rotel tomatoes, (diced is good, otherwise is ok too)
  • 1 can Mexican fiesta rotel tomatoes (or mild rotels)
  • ½ fresh Lime
  • 2 or 3 tablespoons of cumin seeds. They’re the best! (or a little more) Or if you can’t get seeds
  • 1 tsp cumin powder. (or a little more) The cumin is critical!!!!! The seeds are waaaaaayyyyyy better!
  • Fresh Ground pepper
  • Sea Salt. Not a tremendous amount. You can omit this if you need.
  • 1/6 tsp (or a little more if you really like garlic) minced garlic

 

Directions:

Put both cans of Rotels in pan but don’t drain

Add all the Velveeta (small chunks at a time). Turn heat to very low, and pay attention! No burning allowed!

Dice or chop onion (s), and throw it in with rotels.

Use scissors or chopping knife to cut up almost all of the bunch of cilantro into small stuff. Add it. Size really doesn’t matter here, but smaller is sort of better. Stems are good too. (Personal opinion)

Remove seeds from the Anaheim or poblano pepper, and slice it up, then dice it.. Add it.

Remove seeds from Jalapeno’s, slice, chop, and add. (wash your hands after you cut the peppers!) And keep your fingers away from your eyes!

Put as much fresh ground black pepper in it as you like. Maybe around 1/4th to ½ tsp.

Add the garlic

Stir things in and Keep stirring as best you can

Squeeze the ½ to whole lime or lemon into the mix, stir till the Velveeta is pretty much melted.

Add the Cumin seeds (or the powder) Don’t forget this!!! It’s important!!! Critical, actually!

Keep stirring….don’t let the stuff stick to the bottom of the pan! Once its melted to your satisfaction, pour it into a container of some sort, dip some chips in it and eat it….. Simple, huh?

Putting a fresh Jalapeno slice on a chip with the dip is really good. Don’t let neighbors know that you’re making this stuff….. They’ll never stop pestering you! It’s always appropriate to incorporate peppers that are colored rather gaily if possible…it lends to the truly festive appearance of the end product, and will make folks think that you’re a culinary genius, which of course, you are, if you serve this dip!

Adjustments for weak hearted: (by the way, most folks that say that they don’t like spicy stuff will have 2nds Assuming that you just can’t take any sort of spiciness at all, you can adjust this stuff by down-grading the rotels, (go to the mild stuff) or decrease the amount of Jalapenos. Increasing or decreasing (or omitting) the garlic is ok too.

Once your immediate circle of friends is hooked on this stuff, blackmail is in order. You can, like, trade cheese dip for wine, steaks, and lots of other things of value. Don’t let too many folks know that you’re doing this ahead of time. You could be overrun with undesirables!
